This wiki is likely to be defaced by trolls (big debate between Bitcoin Cash and Bitcoin Core, with trolls intentionally making things difficult for us quite often). We'd like for edits by new members and guests (not logged in) to require approval by an admin, or by someone with the appropriate user role. This is the first wiki I'm creating, so I'm not entirely sure of the options available here, but requiring people to log in before being able to edit pages seems like a good first step.

FlaggedRevs does sound like what I had in mind.
https://www.mediawiki.org/wiki/Help:Pending_changes describes a setup that seems appropriate. Ideally, I'd like it to apply to all pages, with some way for trusted users to apply those pending changes without necessarily needing an administrator to be part of it. I think this would require a new user group (to indicate someone's trusted to accept a pending change). Is this possible?

So far, I haven't actually seen any trolling yet, so this might be overkill. On the other hand, few people know about this wiki so far, so maybe it just hasn't become a target yet.

I believe flaggedrevs is able to offer you a group with edits automatically marked as approved.

That kind of group would be nice too, for the majority of users, but I'm also talking of one that can accept the pending changes of other users, without necessarily having other admin privileges. Can this be implemented?

That is possible. I do not know how to implement this at the present time but I know that a reviewer group which can do so is either included or can be configured to work that way

A reviewer group sounds exactly like what I was trying to describe.
