Hi, so since the Auto Create Category Pages extension was added, an error comes up each time I try and add a new extension.
Is there anything I should do to fix this?

I think it's because you will need managewiki-restricted permission to manage extensions when restricted extensions are enabled (including but not limited to Auto Create Category Pages).
I can give you a quick fix of extensions (if the list is provided) using my perms, but essentially, it should somehow be fixed by a tech staff.
The other and the easier way, however, is to disable the extension so that you can manage extensions with the normal managewiki permission. Besides, Auto Create Category Pages can cause massive damage to your wiki when misused/abused, and thus I would not recommend enabling it unless you're sure it will be useful for your wiki.
Yeah, I am happy if you disable Auto Create Category Pages, it will be pretty annoying to have to put a request in to enable each extension. Thank you!
Something is going wrong with your wiki - the custom domain (https://theliteratureproject.org ) will return error 404, and when I tried to fix it on the original domain (https://theliteratureproject.miraheze.org ), I'm forced to log out due to an unknown reason. I think only sysadmins can fix it.

Well, Stewards should be able to access private wikis without member rights, and even if I didn't have the permission to view the wiki, I wouldn't be forcefully logged out on other private wikis as it happened there.
What's surprised me is if Special:UserLogin is private then no one can login though.
